Macaroni and Cheese - 2011 Thanksgiving Feast Cooking Contest Winner 3rd Place (Submitted by Rachael Cottrell)

Ingredients:
1 bag of pasta (medium shells work best)
1 small block of Velveta
1 bag shredded cheddar cheese
½ cup shredded applewood smoked cheddar cheese
Approximately 3 tbsp butter/margarine
2 eggs beaten with a little milk and seasoning (I season with pepper and “slap your mama”)

Directions:
Cook your pasta per package directions and preheat oven to 400 degrees.  Cut Velveeta into ½ inch cubes.  In a casserole dish, layer ½ of the pasta, ½ of the Velveeta then top with ½ shredded cheddar cheese and all of the applewood smoked cheddar cheese.  Add layer of the remaining pasta, remaining Velveeta and disperse the 3 tbsp of butter throughout the dish. Pour egg mixture coating the layers evenly and be sure it sinks down through the layers. Top with the remainder of the cheddar cheese. Bake in oven (covered) for approximately 30 minutes (you want to be sure the cheese melts and the egg cooks). Take the cover off the dish and broil just so the top cheese crisps up (but before it burns).
