I grew up in a very large family, watching my grandmother cook in very large pots. Being a mother of four boys, it is hard to find a recipe that doesn't have to be doubled or tripled. The Short Cut Rotisseri Chicken Noodle Soup makes enough to feed my family of four boys with plenty for left overs and it is delish!
2 - Rotisseri chickens will give you a little over 8 cups of chicken. Use 6 cups of chicken in the Rotisseri Chicken Soup and save the 2 extra cups of chicken for simple chicken tacos the next night.
Short Cut Rotisseri Chicken Noodle Soup
1 onion
2 cup chopped carrots
1 T. olive oil
2 garlic cloves
4 - 32oz containers of chicken broth
3 bay leaves
1 large can of corn
8 cups of extra wide egg noodles
6 cups rotisseri chicken (the kind that is already made at the grocery store)
In a large stockpot, saute the onion, garlic and carrots in olive oil until tender. Add chicken broth, stiring as you add. Add bay leaves. Bring to boil. Reduce heat, cover and simmer for 10 - 15 minutes. Meanhile take the rotisseri chicken off the bone. Add chicken, noodles and corn to the soup mixture and cook until the noodles are tender. Serve and add salt to taste.
Tip: You can also cook the noodles separately and add to each bowl as desired. This is good because it keeps left over noodles from getting soggy.
Total cooking time: 30 minutes. (about the same amount of time it takes to cook a frozen pizza :-))
Simple Chicken Tacos
Rotisseri chicken (off the bone)
Avocado
Tortillas
Pinch of salt
Place chicken in flour tortilla, top with a slice of avocado and a pinch of salt. Wrap and enjoy!!
